Healthy Salmon Patties with Creamy Lemon Herb Sauce
Ingredients
For the patties:
5 (5 oz) pouches wild salmon (about 3 cups cooked)
3 eggs
½ cup almond flour or oat flour
½ cup finely diced red onion
¼ cup chopped parsley or dill
Zest of 1 lemon
1 tsp garlic powder
Salt & black pepper to taste
1–2 tsp Dijon mustard or hot sauce (optional)
1–2 tbsp olive oil or avocado oil (for pan-frying)
For the Creamy Lemon Herb Sauce:
½ cup plain Greek yogurt or coconut yogurt (for dairy-free)
1 tbsp avocado oil mayo (optional)
Zest of ½ lemon
1 tbsp fresh lemon juice
1 tbsp chopped fresh dill or parsley
½ small garlic clove, minced
Sea salt & black pepper to taste
Directions
Prep patties: In a large bowl, mix salmon, eggs, flour, onion, herbs, lemon zest, garlic powder, salt, pepper, and Dijon. Form into 8–10 patties.
Cook patties: Heat oil in a skillet over medium heat. Pan-fry patties for 3–4 minutes per side until golden and cooked through.
Make the sauce: Combine all sauce ingredients in a bowl. Stir until smooth.
Serve: Top warm salmon patties with a spoonful of creamy lemon herb sauce and extra fresh herbs. Serve over mixed greens with cooked quinoa or roasted sweet potato for a complete meal!
